Chickpea and red lentil couscous from Fior di Loto is a 100% legume cous cous, rich in protein and fiber, this recipe is ideal for enjoying a plate of chickpeas and lentils ready in a few minutes. It is recommended to put the couscous in a bowl and season it with a spoonful of extra virgin olive oil. In the meantime, bring the salted water or the broth to a boil. For chickpea and lentil couscous, less liquid is needed to rehydrate than the traditional one: you will need about half the broth or water of the weight of the couscous. Then pour on the couscous and cover, letting it rest for a few minutes and shelling from time to time.
