Originating in the Near East and consumed there for thousands of years, the chickpea is believed to have been cultivated in the 12th century BC. C. along with cereals, peas and lentils. In flour, it will enrich the simplest recipes with a particular flavor and add a gastronomic note to the dishes. It quickly established itself in India, where it became the main legume and staple of the Idian diet. It has been proven that it was the Phoenicians who successfully introduced chickpeas to Spain. It will make its entry during the conquests of the American continent. It is recommended to be used to make traditional socca, farinata, calonita or even panisses. Possible traces of gluten, soy, nuts ( hazelnuts, almonds, cashews ) and sesame.
