Eco sorghum grain from Salud Viva. Sorghum is a type of millet, belongs to the grass family and has been feeding populations in Africa and Asia for thousands of years. Currently, this grain has gained prominence, and scientific publications point to it as an option for the future, like other cereals such as amaranth given its outstanding nutritional profile. Thanks to its high fiber and protein content, it is a very valuable cereal in the gluten-free diet. Sorghum can be used in many ways in cooking, whether to make special breads, porridges or semolina. Culinary use: Cooked grain: It is boiled like rice and used in salads, side dishes or main dishes. Ideal as a base for gluten-free meals.Sorghum flour: Used to make bread, tortillas, cookies and baked goods. It is a popular alternative in gluten-free diets.Porridges and gruels: Widely spread in African and Asian countries, prepared by cooking the ground or whole grain with water or milk, often sweetened or spiced. Preparation: It must be soaked in water for several hours (for example, overnight), for 1 cup of sorghum add 3 of water (do not salt). Then drain the water, add new water according to the required proportion.Lower the heat to medium, and boil uncovered until the grains are as soft as desired, approximately 50 to 60 minutes.
