Santiveri Digestive Gluten Free Cookies are a range of cookies made with gluten-free ingredients. Therefore, they represent a pleasant and nutritious for celiac people, suitable and devoid of any risk. They have been sweetened with maltitol. Maltitol is a polyalcohol derived from sucrose that has a number of advantages over this sugar: it does not cause cavities, it has a similar sweetening power, it provides fewer calories, and it does not alter blood glucose levels. Gluten intolerance is a pathological process that mainly affects children, although adults can also suffer from it. It is characterized by an atrophy of the intestinal mucosa that gives rise to a picture of malabsorption of immediate principles with the consequent signs of malnutrition. The cause is allergy to gluten, which is a protein contained in wheat and other cereals (rye, oats, barley). Cereals that do not contain gluten are rice and corn. Two protein fractions can be separated from gluten: gliadin and glutenin. The first, gliadin, is the cause of celiac disease. May contain traces of dairy products and nuts
