Kuzu Bio by Celnat is a white starch or kouzou starch that is made from the whole dried root. It is very effective in thickening your sauces, compotes and jellies. Unlike other starches, kouzou is prized for its gelling power, flavor, texture, and healing qualities. Kouzou is a perennial plant of the legume family native to Japan where it is cultivated there for its roots providing food starch. Kouzou, endowed with an excellent reputation, has been part of Chinese and Japanese cuisine and pharmacopoeia for more than 2,000 years. The starch obtained from kouzou is an exceptional gelling agent and thickener in the kitchen. It also confers medicinal properties to the preparations that contain it. Container Certain kouzou starch molecules help soothe the intestines and the feeling of discomfort due to excess acidity or attack by microorganisms. Kouzou is also effective in case of liquid evacuations. In several cases, and especially in case of stomach or intestinal ailments, a glass of Kouzou cream provides rapid relief. It is recommended to dissolve the requested quantity in a little cold water and then add it to the other ingredients, rather at the end of cooking. Heat gently until simmering while stirring constantly; the kouzou thickens and becomes translucent. Preparation of liquid with kouzou powder. 1 teaspoon = 1/3 teaspoon For liquid soups for every 1 cup (250 ml) use ½ to ¾ teaspoon For drinks use ¾ to 1 teaspoon For thin sauces use 2 cases For medicated creams use 1 tablespoon For thick sauces use 1 ½ to 2 ¼ tablespoons For jellies and toppings use 2 tablespoons For preparation of tofu use 2 ¼ to 2 ½ tablespoons For kouzou noodles use 4 tablespoons For mochi with kouzou use 5 ½ teaspoons Kouzou can be used as a binder instead of flour, arrowroot or cornstarch, depending on the proportions: 1 teaspoon of kouzou = 3 teaspoons of flour. 1 ½ teaspoons of kouzou = 3 teaspoons of arrowroot 4 ½ teaspoons kouzou = 3 teaspoons cornstarch Acidic liquids like lemon juice require 10-15% more kouzou to thicken or gel than water or alkaline liquids like apple juice.
