Description

To make natto at home. In other words, this starter is the Bacillus Subtilis bacterium, which ferments soybeans, giving rise to natto. Natto is a fermented food, traditionally used mainly in Japan. Natto is soybeans cooked and inoculated with spores of the bacterium bacillus subtilis. Natto is characterized by having a pronounced smell and a taste like strong, cured cheese. It acquires a viscous, stringy texture and is usually accompanied by rice, mustard, soy sauce and chives. With fortifying properties of the intestine and the immune system, as it nourishes the microbiota and helps decongest the liver. It is recommended that once the soy is soaked and very well cooked, it is sprinkled with the natto starter when it is at about 50-52 ºC. It is left to ferment, maintaining humidity for about 24 hours at 38-40 ºC and later, it is refrigerated. Store it in the refrigerator, after the expiration date it can still be used but it will be weaker so consider using a little more than usual.
