The tiger nut is the fruit of a Mediterranean herbaceous plant, the tiger nut. Traditionally used in dietetics since ancient times, the tiger nut is appreciated for its tuber, rich in fibre and the tiger nut flour is obtained after grinding it. Tiger nut flour does not present a risk of intolerance due to its composition. Rich in vegetable proteins, minerals, trace elements (potassium, calcium, magnesium and phosphorus), but also in essential fatty acids, tiger nut flour is ideal for cooking. Source of magnesium and calcium, it is also known to maintain the balance of intestinal flora and contribute to intestinal well-being. It is also rich in antioxidants, containing vitamin E and rutin. It is recommended as a base for gluten-free dessert preparations. In your sweet recipes to make cakes, tart bases, biscuits, crumbs but also savoury ones to thicken gluten-free sauces or soups. You can also consume it raw, in mueslis or compote for example.
