Organic red beans from Primeal. Essential in Mexican cuisine. Accompanied by cereals, it constitutes a plant-based alternative to animal proteins. Soak overnight. Rinse, place in a saucepan with cold water, bring to a boil for 2 minutes and drain (this step helps ensure good digestibility of the beans). Continue cooking in plenty of water, covered, for 40 to 60 minutes. Herbs or kombu seaweed can be added to the cooking water. Can be eaten hot as a side dish or cold in salad.
