Worth knowing: Other than ripe soy beans, edamame beans are softer and have a bright green colour. In the Japanese pubs (Izakaya), these small green beans are a very popular side order to beer. Nowadays also the European sushi bars are happy to offer them.. The still slightly unripe, green and hairy pods are best cooked with their stem in boiling water for 5 to 8 minutes. After boiling, they can be put in a bowl and sprinkled with sea salt and / or other spices such as chili or garlic. Only the green soybeans inside the pods are eaten, not the pericarp of the pods themselves. The soft beans can either be pressed out of the pod with your fingers or sucked out with your mouth. Edamame beans can also be processed into a delicious green puree and served as an exotic side dish to meat or fish. They also make a crunchy vegetable insert for stews and soups and with their aromatic bite, edamame beans go perfectly with fresh salads as well. Natural Place: The Japanese edamame obviously comes from Japan, but it can be found all over Asia and even in Germany it is already grown in small quantities. Cultivation: You can start propagation indoors in March by planting the seeds in pots and place them on a sunny window sill. Beginning of May and after the last frost you can also start sowing outdoors. Make sure to keep a gap of 5 to 10 cm between the seeds and about 30 to 50 cm between the rows. It is best to take two seeds each time and plant them about 2 to 3 cm deep into the soil. Cover the seeds with earth and reline the planting spot with some compost. Since the edamame beans are quite popular with birds, you should prepare some protection for your freshly sown patch. By adding nitrogen-fixing nodule bacteria (Bacterium radicola) to the soil you can increase the later yield already during planting. The rhizobia strain that is common for the soil in Japan doesn’t exist in Europe, but it can be bought in specialized shops. Place: Edamame is a heavy feeder and thrives in deep and nutrient-rich soils with good water retention at a sunny place in your vegetable patch. Care: These plants need nutrients right from the start and they should be watered regularly and generously, especially on hot days. Waterlogging should be avoided. Removing weed and loosen the surrounding soil on a regular basis will lead to a greater yield and a better taste of the beans. After planting out, you should also constantly provide organic vegetable fertilizer. From experience it will take about 2 to 3 months from plantation to the first crop. During Winter: Edamame is not frost-hardy and is sown anew in the following year.
