Worth knowing: The annual, herbaceous plant grows during the summer up to 75 cm high. As early as in ancient Egypt Dill has been already used as a medicinal and aromatic plant, and even in ancient Greece and Rome it was well known and popular. The umbellifer presents its yellow flower umbels from June to August – a beautiful addition to your handpicked bouquet from your own flower garden. If you wish to cultivate Dill in a pot, see that you choose a taller sized container, as Dill grows deep reaching roots.. At a plant height of 15 cm you can regularly harvest the herb by cutting off the tips. Dill gives a great aroma when you pickle cucumbers or gherkins and it is especially suited as an aromatic herb for fish dishes. The mild taste of fine dill fronds blends perfectly with tender fish, like salmon, trout or pike-perch if it was basted with a dill marinade before. For this, you finely crush Dill together with basil, coriander, lemon, pepper and salt. This mixture is spread onto the fish that is then kept for about two days in the fridge before preparing. Dill can as well be used in a variety of gravies, dips, salads and soups, or to garnish your dishes. However, Dill should be added only at the end of the cooking process or shortly before serving, as to preserve its essential oil. Wrapped in tin foil, Dill can be kept in the fridge for up to three weeks, and chopped in small pieces it can be frozen as well. Even making a bundle and hang it upside down for drying in the air is a good method for preserving Dill. Natural Place: Originally, Dill comes from South East Asia, from where it spread through cultivation to southern Europe and later to western Europe. Cultivation: The best time for propagation is starting in February at a sunny place indoors as the seed is a light germinator. Scatter the seeds onto moist coconut substrate or organic herbal soil and slightly press them on. Cover the seed container with clear film to prevent the soil from drying out, but don’t forget to make some holes in the clear film and take it every second or third day completely off for about 2 hours. That way you avoid mold formation on the potting compost. Place the seed container somewhere bright and warm with a temperature between 20°C and 25° Celsius and keep the surface of the earth moist, but not wet (ideally using a water sprayer). Depending on the propagation temperature the first seedlings will come up after two to five weeks. Seedlings that are already raised indoors can be planted out with beginning of May. As soon as there is no more night frost expected, you can move the seedling with its complete root ball, to avoid stress for the plant. Place: The plant needs the sun, warmth and a wind-sheltered place to produce its full aroma. Care: Keep the soil always moist, but not wet. Water your plant as soon as the top layer of the earth has dried out. Fertilize the plant either very modest with compost or organic fertilizer for herbs, or don’t fertilize at all. During Winter: Sow again the next year.
