During the initial fermentation, use a breathable cloth cover with a strong elastic band, allowing good airflow in and out of the jar. SOURDOUGH STARTER JAR: With a large opening, the jar is easy to clean and convenient for adding flour and water to stir the contents and remove the starter when needed.
