Sousvant is perfect for cooking with the "sous vide" technique in a simple way at home and with "gourmet" results. Sousvant is the easiest way to cook food at home with the sous vide cooking technique and obtain professional results at the same time. Sous vide cooking, vacuum cooking or low-temperature cooking, is a culinary technique that consists of cooking vacuum-packed food in bags or jars, which are submerged in hot water below the boiling point at a controlled temperature.. This technique allows you to obtain the perfect cooking point and constantly circulates the water to maintain a homogeneous temperature throughout the water tank. The mild cooking temperatures preserve the nutrients of the food and provide perfect and very tasty textures. When cooking with "sous vide" you can get even tastier results if you add ingredients that enhance or add a personal touch to your dishes when you pre-vacuum-pack your food, such as dressings, aromatic herbs, lemon slices, etc. Sousvant is the device developed by Tribest to obtain the best results when cooking sous vide, a machine for domestic use with a good capacity and great power (1000W). It is very easy to use thanks to its digital display and its precise temperature controls, with a temperature range that goes from 35ºC to 90ºC, which allows you to control the cooking process at all times. It incorporates a powerful circulation system that quickly heats the water to the desired cooking temperature. In order to cook with the "sous vide" technique at home, until now, immersion circulators have been used, small devices that are inserted into the pot or saucepan and that keep the water at the desired temperature for the necessary time. However, there is a safer, easier and more comfortable way to cook at home using this technique, with Sousvant. At Conasi, we are against the use of plastics in contact with food that is subjected to heat. If you want to use plastic bags, they must of course be food-grade and BPA-free bags. Currently there is a possibility that we do consider totally safe to use the sous vide technique: with Stasher silicone bags. With Stasher we have two advantages: they are bags made entirely of platinum silicone and the air inside them can be extracted (it is not as perfect a vacuum as if we used a vacuum pump, but it does get a good result). Another totally safe material option to use in Sousvant is to put the food in glass jars and submerge the jars in the water. Although this limits the size and shape of the food we cook, it is also a highly recommended method. Advantages of cooking sous vide With the modern sous vide cooking method, we slow cook using current technology. Low temperatures for prolonged times is the perfect way to cook and with Sousvant we can do it with exhaustive control of times and temperatures. It is a technique currently widely used in restaurants to obtain very specific results in meat, fish, vegetables and all kinds of preparations with these advantages: Maximum preservation of nutrients. Minimum loss of moisture and weight. Enhanced flavors and aromas are obtained. The use of fat and salt can be minimized. Enhances flavors and colors. Different dishes can be prepared at the same time, without mixing the flavors, since each one of them is in its own bag or jar.
